Wìhsila, My Vìsciola, is obtained from red wine and sour cherries, a variety of wild black cherries. This product was usually obtained by farmers in the Marche countryside, mainly for domestic use as “liquore de casa”. The production technique used is the one most used in the province of Pesaro. According to a centuries-old tradition, the fresh sour cherries harvested in June are macerated in red wine from the previous harvest. The aim of this is to obtain a natural fruit flavour. After a period of 1 to 4 months, during which a low temperature is maintained, the solid mass is left to decant. The liquid part is separated, filtered, sweetened and refined in stainless steel tanks, before being bottled. The characteristic features of this unique traditional product are a very intense ruby ​​red colour, an intense and persistent aroma of sour cherries, a soft and full flavour and a sweetness balanced with the acidity. It is drunk both young and old.
